The ONE Group is working on some dynamic new projects. Tell us more.
It’s an incredibly exciting time for The ONE Group. In New York, we now have an STK in Midtown by Bryant Park. Right outside the restaurant is our new grab ‘n’ go concept, STK OUT, which offers modified twists to the STK menu. In Atlanta, we opened an STK a few months ago, and Cucina Asellina, a spin-off of our New York-based Ristorante Asellina. We recently reintroduced our original brand [One] at the new Revel in Atlantic City, we opened Bagatelle in Los Angeles, and in Las Vegas we’re about to open Bagatelle Beach and Nightclub, as well as a new restaurant in the Palms. In London, we are operating the food and beverage of the new Hippodrome Casino.
You’re reinventing One Little West 12th Street, in New York’s Meatpacking District, as Bagatelle’s flagship as well?
Our very first location, One Little West 12th Street, is an amazing address that has allowed us to transform it into a variety of different concepts. It’s been incredible to witness the same physical space morph into new and unique atmospheres. Our original concept was rustic, chic, and sexy. It’s what launched this company and was a celebrity hotspot for years. Eventually, we transitioned the space to become the Collective, which was an eclectic, vibrant, and wild dinner party spot. In a few weeks, the space will open as the new flagship Bagatelle, which we created with our partners Bagatelle America. Guests will be transported to a chic café in the south of France. The décor and architecture is glamorous with crisp details. The neutral tones and crystal chandeliers create a sexy and sophisticated ambiance.
The STK brand is also rapidly expanding.
We’ve been extremely lucky that guests continue to love STK. It’s really unlike anything else around. This summer we are launching our international operations with STK London, a partnership with ME Hotels, and our seventh location. Each location is slightly different in décor, but all share the same great music and female-friendly menu.

Are there any cities you’re noticing for their vibrant nightlife?
We’re in New York, Los Angeles, Las Vegas, and Miami, so I get to see the best of restaurants and nightlife across the country. Each has its own energy. I love spending time in new markets and discovering what they are all about. We opened in Atlanta and Atlantic City this year, and we are scoping out Seattle, Chicago, and Washington, DC now.

How has the nightlife experience changed from when you first started the company? Any trends you’re noticing these days?
There are some things that always stay the same, but it seems that DJs are really the main focus now for a good night out. At the same time, people want a more intimate experience that feels personal. The space needs to feel cozy, but also be upscale and stylish. Everyone wants to be social, but also have space to have fun with friends. We’re always designing our spaces to be transitional, from dinner to lounging.
